I haven't done a recipe in quite a while so I wanted to share with you this tomatillo and avocado salsa I made a few nights ago to use as dressing to a chicken salad I made for dinner { I will share my chicken recipe later } but for now try this quick and easy salsa recipe and use it in almost anything.

Ingredients: makes 1 cup
1 large tomatillo, quartered
1 large jalapeno or serrano pepper, sliced and seeded if needed
1 small clove of garlic, chopped
1 tablespoon olive oil
1/2 bunch cilantro
1/4 medium white onion
1 medium/large avocado
Salt and pepper to taste

Directions:
You can do this two ways.
- Saute the tomatillo, jalapeno, and garlic in the olive oil over medium-high heat until soft, about 6-8 minutes. Meanwhile, add the cilantro, green onions, and avocados to a blender or food processor. Allow the tomatillo sauce to cool and add to the cilantro, green onion and avocado mixture to blend together. Add salt and pepper to taste.
- Add the tomatillo, jalapeno,onion, garlic and olive oil to a blender or food processor. When well blended add the salt, pepper, avocado and cilantro.
You can add more tomatillos, avocados and jalapenos for bigger servings.
Serve this as a dip, or with taquitos as a salad dressing or to top grilled chicken or beef!
